It would definitely help if you can find some pics of the choices to post.

I really prefer the look of the diamond dial over the roman, it looks more sleek to me and I also I love diamonds! Personally, I prefer lighter dials like white or mother of pearl but I have seen the black w/ diamonds and its very sleek and crisp.

Now that I see the pictures, I've changed my mind to #1! I love the diamonds and the contrast of the diamonds on the black. I would get very tired of the green on the submariner. My order of choices are #1, #3, and then #2.

I found that darker dials always make diamonds "pop" so black would be the ideal choice.

have u all seen the computer face dial before? do u think the black computer face is nicer or just the plain black ??
it is quite difficult to make decision.. as there are so many choices of dials... hehe

If by computer face, you mean the Jubilee face where it reads ROLEX over and over again; I love that dial! Some people find it too brand-y, but I think it's fun!

I would say get the men's Rolex, as ladies watches are trending bigger, and the Men's traditional DateJust (the model you are considering) is 36mm. A perfect ladies watch size, IMO =)
