This recipe makes such a nice cake, really moise and stays moist even if its left out! I guess it could kind of work for christmas, but its probably better for thanksgiving. and if you put a like double the cinnamon in its still good (cap fell off while i was measuring lol) 2 cupsflour2 tsp.baking powder2 tsp.cinnamon1 tsp.baking soda1 tsp.salt4eggs, beaten1- 16 oz. canpumpkin1 1/3 cupsugar1 cupcooking oil Pre-heat oven to 350 degrees. Combine beaten eggs, pumpkin, sugar and oil, beating until well mixed. Add dry ingredients, and mix together until smooth. Spread batter into an ungreased baking pan (15" X 10" X 1") Bake in oven for 25-35 minutes. Cool and frost with cream cheese frosting. Cream Cheese Frosting: 1. Beat together the ingredients below until light and fluffy: 1- 3 oz.. package of cream cheese 1/4 cup margarine 1 teaspoon vanilla. 2. Add 2 cups powdered sugar, beating until smooth. 3. Spread cream cheese frosting over cooled cake. 4. Sprinkle with chopped nuts.
