Polish and Symmetry - is that the cut?

I am looking at diamonds online and I find a lot of appraisals that include the polish and symmetry rating, but sometimes nothing about cut. If the polish and symmetry are excellent or very good, does that mean the cut is excellent/very good? Thanks so much!

Not always. Ideal cut is based on a series of angles.

it's pretty literal, symmetry is just how symmetrical the stone is - you won't want a wonky shaped stone that bigger on one half than the other.
Polish is the edges of the cuts AFAIK, I've seen the cut edges look rough-ish before.

Make sure you differentiate between different types of cuts too.
