Food perfect roast potatoes...is there healthier way?

Hello!

Being a Brit I am supposed to love Sunday roast apparently!! however I'm not a huge fan and rarely eat meat.

I am cooking the traditional sunday feast tomorrow and want perfect crunchy tasty roast potatoes that A, aren't swimming in fat and B, aren't cooked around any meat!

Does anyone have any good recipes for roasting potatoes that taste just as good as the original way?

I use Kipfler potatoes. I lightly toss them in extra virgin olive oil, add a little salt and ground pepper, then put them on a tray and roast them as per usual. It sure beats cooking them in an inch of fat.
 
When I make roast potatoes I par boil them in salted water. Thoroughly drain and dry the potatoes. I melt some butter and coat the potatoes with the butter then roast them. You don't need much fat, just enough to coat them.
