I got this Gucci wallet, it has the GG logo canvas and other parts are off white leather, after about a year of use, I noticed the leather near the opening of the coin compartment turned a yellowish color but there is noway that I would ever touch that part when I open and close the flap. So does this normally happen to white leather with time?

The process is called oxidation. It happens to many organic materials (including leather and fur). You can see it more because it is/was white. All pale colours are prone.
