Well....today is my birthday and almost every year i baked my own birthday cake This year my birthday cake is ...... Carrot cake with Lemon Cream Cheese Frosting here's the recipe....... 150 gm grated raw carrots,squeeze out excess juice,,,,,reserve juice 2 medium apples,grated and squeeze out excess juice ,,,,reserve juice and mix together with the carrot juice......set aside 280 gm Superfine flour,sift 200 gm fine sugar 1 1/2 tsp baking soda 1/2 tsp salt 2 tsp cinnamon powder 240 ml oil 4 large eggs 1 1/2 tsp vanilla extract 110g Walnuts, chopped Lemon Cream Cheese Frosting: 50 gm unsalted butter ,room temperature 100 gm cream cheese ,room temperature 5 tbsp icing sugar,sift (personal taste) 1 tsp vanilla extract 1 tsp grated lemon zest 1/2 tbsp lemon juice For the cake: Preheat oven to 180 degrees C and place rack in center of oven. Grease and flour, or spray with Baker's Joy, 2 ' 9 inch pan. In a large bowl whisk together the flour, fine sugar, baking soda, salt, and cinnamon powder till well combine. In a separate bowl combine the oil, eggs and vanilla extract. Whisk till well combine then add the flour mixture and stir till well mix. Fold in the grated carrots, apples, and walnuts.Add in 2 tbs of the mix juices. Pour batter into prepared pan and bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool cakes on wire rack and when completely cooled, spread with lemon cream cheese frosting. Frosting: Beat cream cheese and butter until fluffy. Beat in icing sugar, vanilla extract, lemon zest and juice until well combine. Sandwich cake with frosting and well chill before serves.
