Can you fit the Book Tote over your shoulder? You'll need to be able to go hands free with a baby. You can get an organizer with a zipper for the Book Tote if it's The One (so the missing zipper isn't a real problem). The fact that it's all fabric might not be the best thing in the world though, since it absorbs everything from baby formula to rain.
A canvas LV is a popular choice, there are also zippered organizers for Neverfulls if you like the style. Enni's Collection makes liners per request, you can also get one with a zipper and two bottle holders.
My choice for babysitting gigs has been either a JuJuBe BRB backpack or a Longchamp Le Pliage in nylon. JujuBe bags are lined with a stain resistant fabric and a LP you can wash if it gets stained.
