Muffins with HUGE crusty tops - How to?

  1. Hi, Ladies

    I have wondered for years how bakeries get those HUGE crusty tops on their muffins.

    What I have tried:
    *Muffin tins that have shallow wells for muffin batter.

    *Extra baking powder to mixture.

    *Letting batter sit for 20-30 minutes before baking.

    Any tips? Please?

  2. I was going to say a muffin pan that is so flat you only have the muffin top, but you've already mentioned it. The temperature might have something to do with it. You could email/call King Arthur Flour (I'm not sure if they advise people over the email/phone), but worth a try.

    They also sell the muffin top pan.

    I wish I knew how to do a huge muffin top, because it is the only part of the muffin I like.
