I just recently purchased one but not after waiting a while. I remember seeing them on the H website and on display in stores. Now they seem nowhere to be found. Is it because people’s lifestyles are changing due to the pandemic?

I see picos pop up every now and then on H.com (Europe), but they are gone within minutes it seems. Just like the Herbag and Garden Party sometimes

The small size seems to be hard to get but not the larger ones.
Tbh I think any entry-level price range (by that I mean ones that retail between £2000-£3000) Hermes is pretty much in demand especially in the popular smaller sizes

I think that H has found a new business tactic since the pandemic. So buying a Picotin may be way harder than before. Back in the day, you waited for a B/K/C (assuming C is a quota bag in your store). Now, it seems that most H stores have pre-assigned almost all the bags coming in even before it reaches the stores/say that they have no or low stock/kept almost all their bags (not just the B/K/C) in the back for those customers that they want to reward/entice/sell it too. It seems like most of their bags are used as "prizes" for their loyal/chosen ones.
Before the pandemic, they usually had a good number of bags (that are not QBs) on display that are for sale..Picotin included of course.

After months of visiting 4 stores in the northeast and not finding either a Picotin 18 or Garden Party in 30 or 36 (admittedly all of my visits were on weekends), I was offered two picotin 18s (blue or black) and a GP30 over two visits in FL BUT was told I could only purchase one. (I chose the GP.) I was open to most colors and for GP any material. So they are definitely trying to manage demand.
