I am going to make peppermint bark to take to our 4 different holiday gatherings this year. It makes a nice refreshing treat and after a heavy meal, peppermint helps with digestion. This also makes a nice gift when placed in a tin or box and wrapped up with a bow. It's very simple. Melt one pound of white chocolate or white almond bark on the stove top or in the microwave. Stir in crushed peppermints, as many as you'd like (to taste.) Spread this mixture onto a baking sheet lined in waxed paper and let it chill for 30 min or so, then break into pieces. Viola! You can also add green or red food coloring for a different look. You can also drizzle melted chocolate over the mixture after you spread it in the pan, then drag a toothpick through it so that it has a marbled look, before you chill it. Makes it a little fancier.
