Easy healthy chicken/fish marinades

  1. For Chicken drumsticks, you can try
    1. honey, dijon mustard, curry powder and lemon juice.
    2. soy sauce, honey, garlic powder, a little brown sugar
    and bake at 350 F for about 40 min or until the juices run clear.

    I usually poke holes in the meat and just marinade about 1 hour before baking.

    Be sure to marinade at least 3 hours in the fridge for the best results.
  2. for chicken or pork (we love this on ribs, although i started out making it on chicken):

    - rub down raw meat with garlic cloves
    - add sea salt and coarse pepper
    - drizzle liberally with low sodium soy sauce
    - cut an entire lemon into wedges and squeeze onto meat
    - cook meat in oven or on stovetop while covered

    i also love herbs de provence in chicken or turkey burgers. if you can't find it at the store, you can just make your own using dried thyme, basil, sage, orgegano, savoury and rosemary, sea salt and coarse pepper, and fennel seed.

    i also love paprika and fresh chopped dill on fish.

    and love the zests of oranges and lemons...
  5. For salmon, you can bake them with honey dijon mustard and lemon.

    i made a fresh lemon & basil marinade last week that came out so light and yummy...juice of 2 lemons, tons of fresh basil, salt, pepper, garlic powder, and some olive oil in a blender
  7. Just found this thread in a search.

    Today, I picked up a chicken from a local farm and cut the breasts off to marinade. I put in olive oil, some peppercorns, and fresh herbs from my garden: basil, Italian parsley, basil, and garlic chive.

    You might want to add a little acid, as that's what breaks down the protein of the meat. You don't want to use too much, but you can use lemon, or another fruit juice, or any kind of vinegar.

    I do love my herb garden. About two years ago, everything kind of died out...I think the soil was depleted after 11 years in one spot. I couldn't afford to restart it, so two years later, I'm incredibly appreciative of it.
  10. The marinade was good, but the rosemary did over power the other herbs a bit.
