Food Dinner party ideas- need ideas for all courses!

Hi everyone

Throwing a surprise party for my Mum next weekend and we are having it as a dinner party.

I'm doing all the cooking myself (:faint:) but need some ideas on what to cook.

Nibbles for when people come
Starter
Main
Dessert
And should I do cheese + biscuits?

There is a vegetarian so I need vegetarian ideas too.

Also need ideas for drinks when people arrive- was going to do cosmopolitans but not sure because its men and women. Champagne?

Go w/what would work best for mom, guests, and your schedule/desire to cook. Personally, I don't like being stuck in the kitchen when guests are over, so I'd likely do a menu w/items that could be made ahead of time and then popped into the oven for warming. Below is a menu I might do (but I like to eat and don't mind heavy meals):

Starters: Baked brie w/crackers, prosciutto-wrapped melon slices, small veggie platter w/dip (wine option: prosecco)
Main: Eggplant parm, garlic crostini, field greens salad (wine option: chianti)
Dessert: Chocolate mouse w/fresh whipped cream (optional crushed hazelnut topping) or fruit parfait (drink options: coffee w/baileys, warmed grand marnier, or more prosecco (or possibly a rose cava)).
