I also like to do lots of "medley" plates, with things like hummus, toasted pita, olives, peppers, tabouli salad, other veggies or fruits.
Or breakfast foods are easy to cook for one person.

I also make taco soup during the winter. Can of chicken (or you can cut up 2 cooked chicken breasts). Can of chicken soup. Can of corn. Can of pinto beans. Can of Rotel (diced tomatoes). Slow boil and serve over chips. This is better after a day or so. My favorite leftovers. And so great for impromptu, casual parties. It's almost always a hit with people.
