I just made this for the first time last week, and it was a big hit at our house. Cook three pieces of corn on the cob until just crisp-tender. After it cools, slice the corn off the cob and mix with chopped tomatoes (I used Romas), three green onions, red wine vinegar, olive oil, salt and pepper. This serves about four to five people as a side dish. I made this up a couple of hours ahead of time so it could marinate together for a while. Even my mom (who was visiting and is very picky about food) loved it.
