Buy it out or best offer?

I was wondering how this sort of works.

So I listed my item for a BIN price... and put best offer. Can I decline all the offers I get that I don't like?

If I decline them all, and the auction ends, do I still have to sell it for the highest best offer?

Also, another question... I have multiple items for sale*in one listing. And Ebay says that if I accept an offer, my listing will end immediately. Since I have multiple items, my auction won't end right away right, until I've sold them all, correct?

As far as I am aware no it won't end right away. Doesn't make sense based on the fees you would have been charged.
