Are there some types of leather that are easier to stitch than others?

I have been studying stitching on bags specifically Kelly sellier and I noticed that the barenia ones tend to be a bit messier and the epsom and togo/clemence ones look a bit cleaner. I don't know if the leather has anything to do with it, like maybe one type is harder to stitch than another due to its density or delicate nature? Or maybe it really just depends on the artisan that sewed the bag.
 
Holes are pre-perforated, so no leathers should be easier or harder to stitch. Because H leathers should be fairly consistent re uniform thickness per bag and size, there should be no issues of inconsistent tension (as there are with inferior leathers).

The only 'harders' I know of are:

Stitching curved areas of any curved bag, including putting in zips on a machine like on a bolide (my SA taught me that).
Selliers show(-off) stitches, so any minor mistakes are more noticeable
Contrast stitching, again because the stitches are more noticeable
Rolled and/or corded handles, which is why less expensive bags have flat handles/straps
