There are so many I like, all for different reasons:

Unicorn - It's so beautiful and rare and special. It has this purity to it. (Legend has it that only a virgin maiden could tame one.) Little girls dream about being a princess and owning a pet unicorn. (Mine always had wings!)

Pegasus - Pegasus was a winged horse that was the son of Poseidon, in his role of horse god, and the Gorgon Medusa. Athena caught and tamed Pegasus, and presented him to the Muses at Parnassus. After he became the horse of the Muses, he was at the service of the poets.

Phoenix - It lives for 500 years and then becomes engulfed in flames. Then a new baby phoenix rises out of its own ashes, giving it this immortal quality.

Griffin - If the lion is the king of the beasts, and the eagle is the king of the skies, the griffin is the best of both worlds. (Since the griffin has body of a lion and the wings of an eagle.) It's so regal.

Dragon - In medieval symbolism, a dragon is depicted as being treacherous or evil. In Chinese symbolism, it represents good luck and protection.
