This may sound really weird but FRIED FISH AND BAKED BEANS OVER A CAMPFIRE!
I used to go camping with my best friend and her family when I was about 15. We would catch fish and swim all day and then cook under the stars at night. I felt so healthy and relaxed.... Since this was up north, a summer like this was very special. I now live in Florida and have eaten lots of unique summer dishes, but when I think of a favorite, this is immediately what came to mind.

my favourite summer food has to be mangoes. they're so sweet and delicious and vibrant looking. yum yum yum!

Homegrown tomatos!! It is so hard to wait patiently until my first BLT in July.

All the summer fruit; peaches, nectarines, cherries, blueberries, watermelon. Just not nearly as good when its shipped from far away in the winter.

I love to grill in the summer. There is something about being outside, cooking yummy food, and having a nice cold beverage.

My favorite summer food is the Lobster Rueben in the Keys, yummm .... you know you are vaction watching the sunset, drinking an icy cold Corona and having a Lobster rueben.
