My mom used to make this great snack by frying uncle bens parboiled rice and tossing it in spices while it was hot. I wish i knew which spices she used since it was delicious!!
Crab cakes, lobster bisque, cheese souffle...and it's never the same twice, but every time she makes chicken, she pounds it out super-thin, pan-sears it, and finishes it with a sauce made from whatever she has on hand (usually shallots, white wine, etc).
