Spinach Dip

  1. Hello everyone!
    I'm not a very big vegetable eater. I've disliked certain vegetables since i was little, especially spinach.

    CPK's SPINACH DIP made me give in to eating vegetables..

    Does anyone know how to make spinach dip like CPK?

    1/4 cup olive oil
    2 tablespoons unsalted butter
    3/4 cup diced white or yellow onion, cut into 1/8-inch dice
    1 1/2 tablespoon minced garlic
    1/2 cup all-purpose flour
    1 1/2 cup chicken stock (preferable homemade)
    1 1/2 cup heavy cream
    3/4 cup freshly grated Parmesan cheese
    2 tablespoons dehydrated chicken stock base or crumbled bouillon cubes
    1 1/2 tablespoon freshly squeezed lemon juice
    1 teaspoon sugar
    3/4 cup sour cream
    12 ounces frozen spinach, defrosted, drained, wrung out by hand, and coarsely chopped
    6 ounces canned artichoke bottoms, drained and cut into 1/8-inch slices
    1 cup finely shredded Monterey Jack cheese
    3/4 teaspoon Tabasco Sauce
    Blue and white corn tortilla chips


    In a large saucepan, warm the olive oil and butter together over medium heat. When the butter has melted, add the onion and cook, stirring occasionally, until wilted, 3 to 4 minutes. Stir in the garlic and cook 2 to 3 minutes longer, stirring frequently and stopping before the onion and garlic brown.

    Sprinkle the flour and continue cooking, stirring continuously, until the mixture turns a golden-blond color, 10 to 15 minutes. Then, whisking continuously, slowly pour in the stock until it is smoothly incorporated. When the mixture begins to simmer, stir in the cream. Let it return to the simmer. Remove from the heat, add the Parmesan, chicken base or bouillon cubes, lemon juice, and sugar, and stir until thoroughly blended.

    Add the sour cream, spinach, artichoke bottoms, Monterey Jack cheese and Tabasco sauce, and stir until the ingredients are thoroughly combined and the cheese has melted. Transfer to a warmed serving bowl and serve immediately, accompanied by blue and white corn tortilla chips.

  3. i've never had CPK's spinach dip but i've tried a lot of recipes for spinach dip and this is my absolute FAVORITE. and SUPER easy too.

    1-1/2 cups KRAFT 100% Grated Parmesan Cheese, divided
    1 can (1 lb. 3 oz.) asparagus spears, drained, chopped
    1 pkg. (10 oz.) frozen chopped spinach, thawed, drained
    1 can (8-1/2 oz.) artichoke hearts, drained, chopped
    1 container (8 oz.) PHILADELPHIA Chive & Onion Cream Cheese Spread
    1/2 cup KRAFT Mayo Real Mayonnaise

    PREHEAT oven to 375°F. Reserve 1/4 cup of the Parmesan cheese; set aside. Mix remaining 1-1/4 cups Parmesan cheese and all remaining ingredients until blended. SPOON into 2-qt. baking dish. Sprinkle with reserved 1/4 cup Parmesan cheese. BAKE 35 min. or until lightly browned. Serve hot with WHEAT THINS Snack Crackers or assorted cut-up vegetables.

    Here's the recipr I use. Super easy and I always get tons of compliments.....

    Spinach Dip

    1 box (10 oz) frozen chopped spinach, defrosted and squeezed dry

    16 oz sour cream

    1 cup real Mayo (do NOT use Miracle Whip)

    1 small can of water chestnuts, chopped fine

    1 box (pouch) Knorr Leek soup mix

    Combine all and chill for a few hours (overnight is actually best) in the fridge for the flavors to blend. Recipe may be doubled.

    Optional- served in a hollowed out sourdough

  6. also you can goto www.copykat.com and try to search for CPK recipes. they redid the layout a few years ago and i absolutely hate it and can never find any recipes like i used to, but once in awhile you get lucky!

  11. i made a spinach dip last week, almost the same with this recipe. i just didn't put water chestnuts and instead of leek soup mix, i got the dry vegetable soup mix.
