I have GOT to try this. I keep seeing it pop up on Pinterest!

Ohh, it's popping up on Pinterest? It's so quick and easy, I was amazed at the result. I'm not much of a cook (I'm slowly learning and practicing), but this recipe I think will prove that avocado can be used as a replacement for butter/cheese/mayo in pasta, sandwiches, etc.
 
I've been trying to eat healthier lately... now I just need to start exercising as well LOL.

Today I made a bulgar salad. It was pretty good. I think I would enjoy it more as a side, rather than a large salad.

Bring half cup water to boil; pour over 1/2 cup bulgar and 1/8 t. salt. Stir, and cover with cling wrap for 30 min.

Meanwhile, remove skin and seeds from half a cucumber, and dice.
Dice:
1/2 shallot
1/2 cup flat leaf parsley
Some roasted almonds or pine nuts.
Fresh ground pepper and salt to taste.
Dress with 1/2 T. olive oil and 2 T. lemon juice. Add feta cheese.

Add to bulgur and enjoy. Can be served warm, room temp or chilled. Can be refrigerated for 1 day.
