  7. souffle is different

I've been perfecting brulee because I love it.

Beat 4 egg yolks and 1 tablespoon sugar
Heat 2 cups heavy cream to almost boiling
Pour heavy cream into egg yolk mixture and whisk
    Add 1 teaspoon vanilla essence
Pour into ramekins, place ramekins in water bath (water 2/3 high on the ramekins)
Bake at 350 until top is lightly browned (30-45 mins - keep checking)
Do a toothpick test to see that it is cooked
Place ramekins in fridge to cool. I usually leave mine in overnight.
Then glaze the brulee with sugar and use a kitchen torch 6 inches higher than the ramekin to create crust. Do it twice for the best crust.
Top with fruit and/or powdered sugar.

  8. ^^^^^ Just a hint for your recipe. It looks great and so so the brulees.
Use hot water in your water bath. It will reduce the cooking time.
  9. When's dinner? LOL

Looks really great and the recipe seems very do-able. Thanks for posting!
