Default Zucchini Bread Help!

My husband brought home a huge zucchini. I decided to make zucchini bread. When grating the zucchini do you first peel the dark green skin off? I peeled it off and only grated down to the seedy part. Can you use the entire thing? I remember my Mom making zucchini bread when I was young. I thought she put the whole thing in the blender? Does anyone have any tips?

I don't peel it when grating it. Come to think of it I never peel zucchini.

my mom makes it and just uses a cheese shredder and does the whole thing...skin and all. the skin adds a pretty color and texture

Don't peel it, just put it through the food processor with the grating blade, it will be done in seconds!
