I love Southwest Chicken Salad:

Romaine Lettuce
Avocado
lemon juice and lime juice
black beans
corn
cheese
grilled chicken strips
red onion
cilantro
diced tomato
red pepper
ranch dressing

Man I WISH I liked salads. I just don't like veggies. I can stomach lettuce and French Dressing and cheese but if anything else is put on the salad I just can't eat it. I swear I'd be in better shape if I could appreciate salads like you girls do!

I love BBQ chicken salad!

BBQ chicken (with BBQ sauce)
jicama strips
grilled corn
diced red pepper
iceberg lettuce
mixed baby greens
cilantro
green onion
tortilla strips
avocado

The last two I usually leave out because I'm trying to eat a bit healthier. I don't eat it with dressing, but it would be good with ranch.

baby spinach, candied pecans, dried cranberries, grape/cherry tomatoes, grated mozarella and a sprinkle of crumbled bleu cheese all tossed with raspberry vinaigrette. sometimes i add slices of crisp apple and little bits of bacon in there too.

Pecan Crusted Chicken Salad

Romaine Lettuce
Balsamic Vinegerette
Manderin Oranges
Cran Raisins
Chicken covered w/pecans
Celery

I could eat this salad everyday!

I love applebees chinese chicken salad.
but what I like in my salad is just about everything:
- tomatoes
- onion (purple and white)
- bacon bits
- crunchy noodles
- chicken
- mandarin
- blueberries/raspberries/strawberries, etc
- blue cheese (or that crumbled cheese, whatever it's called)
- radish
- cucumbers
- nuts
etc...

I also like spinach and dark greens, combined with light green lettuce leaves.

Spinach with dehydrated raw cranberries and fresh figs (when in season, like right now), almonds or pine nuts, roquefort or feta cheese crumbles and an organic olive oil & balsamic vinegar mixture.

For a heartier salad (more like a meal), I was given this recipe

TRADER JOE'S VEGAN SALAD YOU CAN TRAVEL WITH (although the ingredients don't have to be from trader joe's)

In plastic container mix:

Brown Rice (1/2 Packet frozen microwaveable Frozen)
Organic Black Beans (1/2 can)
Roasted corn
Fresh peas
Chopped cilantro
½ avocado (squeeze w/ lemon or lime)
Crumbled tempeh, Yves ground round or tofu (many options here)
Capers (optional)
Garlic salt (optional)

In a separate bags:

Chopped lettuce
Small tomatoes
Tri-colored bell peppers-chopped
Slivered Almonds

Dressing (approx)...

½ cup non-fat soy yogurt (or dairy if prefer)
1 ½ Teaspoon cumin
1 ½ Teaspoon shilling Mexican Spice or Chili Powder
Garlic salt (optional)


Mix it when you're ready to eat.
