What is your favorite kitchen gadget/small appliance?

Wow, hard to pin down! I love my set of knives and the Corian block they sit in (not wood!). I also splurged on an upgrade of my Calphalon cookware to the version which now has handles that don't get hot. What's funny is that I still have a few older pieces and have to remember what needs a potholder on the handle and what doesn't.

Also, YES, the George Foreman grill! Chicken dinner in 10 minutes already!!
