Everyone is so healthy: my four men like meat and potatoes. They need weight on them so I made chicken fried steak with gravy, macaroni and cheese, corn and fresh celery and carrots with Ranch dressing. Typical Texas fare. I wish I ate in some of your homes!

Picked up a fully cooked lemon pepper rotisserie chicken from Publix, and I made garlic mashed potatoes

Tonight's dinner:
South of the Border Chicken 2 skinless, boneless chicken breasts 1 diced bell pepper 1 diced med onion 1 teaspoon chopped garlic 1 diced tomato 2 sliced jalapenos ¼ cup chicken stock 1/3 cup heavy cream 1/3 cup shredded cheddar cheese Salt and pepper In large skillet, over med heat, cook only until chicken breast turns lightly brown. Add onion, bell pepper, garlic, jalapeno peppers, and tomato. Simmer for 2-3 minutes. Add chicken stock, heavy cream, and cheese. Add salt and pepper to taste, simmer for another 1-2 minutes. Serve over rice or pasta This is so easy to make and so delicious!!! |

My 9 year old son's having a play date at our home. Domino's pizza with buffolo wings are what they usually ask for dinner.

I am making a meatloaf. Mmmmmmm. I used oatmeal instead of bread crumbs and lean beef to make it healthier. I stuff mine with cheese and mix in some marinara sauce, pesto, and other spices.

I had lemon pepper rotisserie chicken from publix tonight too
my favorite!! got the last one. made some pasta & veggies to go with it (ramen noodles minus flavor pack & steamed veggies).

last night we had Salad Nicoise with fresh, rather than canned, tuna.
tonight we are having Dijion basil chicken breasts with steamed veggies a little whole wheat pasta. |

I'm not much of a cook, so when I do cook, it is quite an event! Tonight we're having left-over Organic Shepherd's Pie that I made from scratch yesterday (it took me two hours), steamed asparagus, Trader Joe's pre-baked seeded sourdough loaf, and blood orange for dessert.

Tonight is another night out...no cooking. Hooray!
For lunch I speared grapes, laughing cow cheese and turkey on toothpicks for my almost 4 year old daughter and she was thrilled. The danger factor of the toothpicks was great for her! |
