nseastar - That recipe sounds fab, im definetly going to try. I know what you mean about the pigs, they are so smart and adorable - one of my fave animals. Lucky my DH doesnt like pork anyway.

SO and I are not vegetarians but we do eat meatless pretty often. I find that cooking vegetarian is a lot easier, and the leftovers are better!
Last night we had a meatless lasagna, based on a Whole Foods recipe. Super easy!
I just layered no-boil lasagna noodles with WF brand Roasted Garlic pasta sauce, and a mixture of ricotta, shredded mozzarella, shredded parmesan, and a little dried oregano. Assemble it with a thin layer of sauce at the bottom of the pan, then go noodles-cheeses-sauce-noodles. The top layer is noodles- sauce- mozarella. Bake for approx 30 mins at 350. So easy!! We will be having leftovers tonight and tomorrow.

Make instant rice; heat a can of rinsed black beans with 1/2 cup vegetable stock, a squeeze of lime, salt and pepper. Place rice and beans on a tortilla; top with grated cheddar, avocado, sour cream and hot salsa. Fold!
thank you!! i think after reading this i might actually try a mixture of rice and beans! we'll see how it turns out any suggestions??

this might be a dumb questions but what is couscous??

^^ It's like a rice/pasta that's used in a lot of North African countries...it's become pretty popular in the U.S., especially as a healthy food. If you google it you can see what it looks like/how it's prepared.

Here ya go; http://en.wikipedia.org/wiki/Couscous In my casserole their texture is a little more, custardy? creamy? I don't know- just different.

I make rice and bean burritos similarly to that recipe but I add cilantro, corn and salsa. Yummy!

Hubby is out of town tonight so it's leftover zucchini casserole for my daughter and myself. I'll probably make a salad too.

As a side note, I'm finding this thread really useful in keeping track of how old my leftovers are, lol.

^lol nseastart! thats funny! just see what day you posted it! hehe

tonight me and the DD (who's 4 so this was funnn ) made manicotti! we stuff the noodles with spinach, mushrooms and ricotta cheese. it was really good and DD had a blast helping me! i've found that if she helps me make something she is WAY more likely to try it!

my DH grilled some chicken breat for himself also and we all had a salad

I made whole wheat pasta tossed with chopped spinach sauteed in olive oil, garlic and pine nuts. Topped with fresh grated parmesan.

^^ I just cant eat whole wheat pasta, dont like the texture and for me, I may aswell not eat pasta if i have to eat this. I wish I could like it! I have no problem with wholemeal bread and brown rice though.

Tonight I had crackers & cheese, hot chocolate and 2 krispy kreme donuts. LOL

Hmm, I don't cook with eggplant either. Eggplant parmesan and baba ghanoush(sp?) are the only things that pop in my mind. My grandmother used to cut them like french fries and batter and deep fry them- so yummy but pretty much obliterates any health benifits.

My husband is still out of town and I am taking full advatage of the oportunity to be a lazy cook. So tonight my daughter is having mac and cheese and green beans and I'm having Wolfgang Puck canned potato chowder. We will rusume our normal healthy eating habits tomorrow.

It was pretty good. I was too lazy to follow the recipe exactly, so I used plain couscous and herb and garlic flavored feta. Skipped the pine nuts and olive oil, too but added chickpeas. Let me know if you try it!
