Im a vego but my DH is not. Although, he normally eats only vegie meals now because of me. I do cook him chicken and a steak maybe once a week each.

Lastnight I made a simple, but tasty meal.

Potato and Zuchinni soup (I dont know exact quanties, I just put whatever I have)

Chopped onion (1)
Garlic cloves crushed
Chopped potatos (about 3)
Chopped zuchinnis (about 2)
Vegetable stock
Herbs of your choice, I put oregano and pepper.

Cook until potatos are soft. Blend with stick mixer.

Add 1/3 cup of brown rice.

Cook until rice is soft. And there you have an easy healthy meal!

I was really busy this afternoon so for dinner tonight, I just made a grilled cheese with gouda and cheddar cheeses.

This sounds good. Is it like a creamy soup with rice in it? Do you put DRY rice into the blended soup then cook til done? Oh, and do you leave the skins on your potatos or peel?

^^ I peel my potatos. Because you blend it it goes thick and creamy like but without the fat of cream. I put dry rice in the soup and cook in there because its easier for me, but if you have leftover cooked rice you could just add it in after you have blended. Im sure it would taste the same.

It probably is better to put already cooked rice, because when I cook the rice in the soup, I have add some more water/stock because it goes too thick.

Tonight is Mushroom Puff pastry tarts.

In some olive oil fry off 1 onion, clove of crushed garlic.
Add a cup or two of chopped mushrooms and cook another minute or so. Add herbs of your choice.

Put on puff pastry with a handful of grated mozarella.
Fold in a triangle, square, however you like.

Bake in the oven till golden. Yum Yum. This is my dinner tonight, and for DH I just add shredded roast chicken. Served with salad and potato wedges.

great thread!! the "whats for dinner" question is prob. the single thing that has kept me from becoming a Vegetarian sooner! my dh isn't and i don't think he every will be...

i really look forward to everyone's replies! can we include recipes for newbies like me

It seemed a little hard to me at first because I had to completely change the way I thought about dinner. Now it seems so easy I don't know what my problem was. My hubby eats meat and always will I'm sure. He does eat ALOT less than he used to. If I post anything you would like a recipe for I'd be happy to post it.

Last night I made fettuccine alfredo with broccoli. I ate left over chili though because I'm staying away from white pasta for a few weeks since it's almost shorts and bikini season. My husband ended up wanting left over stir fry (he added some chicken) so my daughter was the only one who ate the fettuccine. Now we have a TON of left over pasta.

Yesterday- I had cheese ravioli with a side salad
Tonight- either veggie lo mein or veggie fried rice yummmmm!

i'm going to the race track with my dh today so i made guacamole and i'm taking stuff to have a lettuce, tomato & mayo sandwich for lunch and i made a salad to take for supper!

today is my 5th meatless day hehe
