Using Up Excess Celery?

Does anyone have any (healthy) recipes for using up an overload of celery before it goes bad? Or any ideas how I can freeze it to use later? (Does it even freeze that well?)

I'm having one of those mental blocks where I can only think of 3 ways to use it: chicken/tuna salad, soup/stock, and just eating it plain. Thanks in advance!

I don't know if you ever stir fry food, but celery works great chopped up and stir fried with pork or chicken. :)

I have to admit though, I typically buy celery for this purpose, use it once, and then forget about it until the rest goes bad. Whoops.

I have a bag in the freezer that I put extra celery, carrots, onions, and other veggies that work well in soups. When I make chicken broth I throw the freezer veggies into the pot.

I've used this braised celery recipe to use up leftover celery.

I also keep my extra celery in the freezer and use it for meatloaf...

Eat 3 stalks a day plain and you'll probably lose weight.

Add to a lettuce salad and it makes it heartier.

Add to omelets.

Garnish anything: egg rolls, sandwich, any meal. Slice into thin strips.

Slice into chips with kidney beans and green onions and maybe a little dressing.

Waldorf salad: add apple and walnuts with a small amount of sweet dressing (lite mayo or yogurt and sweetener)

Add to a quesadilla.

Add to a breakfast burrito.

Slice into chips and munch on it in front of the TV. For times when your mouth wants to eat but your stomach doesn't care what it is.

I sometimes make a soup similar to this, which uses a pound of celery:

Mine doesn't take three hours, though!! I tend to just simmer it until the celeriac is soft, and haven't noticed any problems with flavour.

Oh - I also use leek instead of the onion - I find it gives a more subtle flavour.

i juice it with green apple. 2 stalks of celery + 1 green apple is enough to make 1 glass of juice.

Slice it super thin, throw in some shrimp and get some cocktail sauce. I do that all the time and it's soooo good and healthy too. Or just use lemon juice and a hit of Tabasco.

Thanks for all of the suggestions! I'm probably going to use every single one because I have THAT MUCH excess, LOL. I think my eyes outdid my brain at CostCo!
