Default There has to be a better way-eggs

I have to be doing something wrong! It can not be as frustrating as I make it to peel hard boiled eggs! Anyone have any tips or tricks!!!
Or this will be the last time my family has potato salad this year!

Give it a quick run under cold water has always worked for me.

Put the eggs inside saucepan/casserole/whatever you use to boil eggs with room temp water. Put the lid on. Turn on heat. When the water boils, turn off heat and keep eggs inside for 12 mins (although I'm really forgetful so I often leave them in longer).

After 12 mins take em out and run under cold water if you wish to peel them right away (they'll be hot). I find that they are easy to peel even later on without running them under water though

Go to Target, the have this egg shaped thing that you put 4 eggs in and you cook it on the microwave. 6-7 soft for medium boil, 8-9 med, and 10 for Hard boiled. I love this thing. Even thought I can cook eggs on the stove, I love using this thing and the eggs come out Perfect ALL the time.

^ ^yep same here as soon as done boiling run them in cold water and if you don't want to peel them right away put them in fridge in the cold water--so easy to peel

Isn't that thing cool!! When I first saw the alumnium lining...I was like "this is not going to work" but I LOVE IT! My eggs turn out perfect all the time. I make 4 at a time for my salads. (only one in the salad at a time).

Well we don't have target in Canada, so I might try wal mart for that.
I have been running cold water over them after they are done but then putting the eggs in a bowl in the fridge, I might try putting them in cold water in the fridge. Thanks for the ideas!

I struggled with trying to make perfectly smooth hard boiled eggs for years. Finally someone told me the secret to perfect eggs, every time: steam them!

Put a steamer tray


in a saucepan. Add enough water so it comes to just below the floor of the steamer.
Add eggs. I also like to add a red gadget that tells me when the eggs are soft or hard boiled by turning black.


Cover and cook on medium low. If you cook it on a higher setting, you can easily crack the shells and make a mess. If I start with cool water, I find it takes around 28 minutes to get hard boiled.

Then I take out the eggs and put in the fridge. If I wanted eggs whose shells almost fall off, put in a bowl of cold water. To peel, crack the eggshell all over, rub between your palms, and lightly massage the shell off the egg. Remove any tiny pieces of shell by placing the egg under running water.

Tomorrow I make Salad Nicoise. Yum!

I normally crush the top and bottom slightly, roll it once round to break up the shell. Peels right off after that.

Roll 'em on the counter. You don't kill your fingers or the eggs. No need for fancy gadgets.

LOLOL I re-read this...I thought you were asking HOW to boil them, not PEEL them....If you need to PEEL them, I just roll it on the counter or tap one end so it's cracks and then peel.

I've noticed that when you crack them, there is an air pocket at one end. If you start at the air pocket, and gently peel back the skin between the egg and the shell, it should come off easily. I make deviled eggs quite a bit for get-togethers and getting them perfect can be frustrating!

This thread reminds me of a time when I was little and I was put in charge of peeling a gazillion hard-boiled quail eggs for someone's wedding. Even with little fingers, it was such an awful experience that I still remember it today.

I usually boil my eggs and then leave them to sit for a while. Then I roll it on the counter before I crack the egg and peel it.

I was at the grocery store the other day, and Eggland's Best actually makes pre-peeled hard-boiled eggs that come like 8 to a bag. The only b***h is that you have to used them all within a few days of opening the bag, but if you're making potato salad for a group of people, it sounds like that might not be much of a problem. They're not too expensive (and to me, the extra buck or two is well worth me not having to waste my time hard-boiling and peeling), and you ought to be able to find them next to the egg-beaters in the egg section.

Rolling them on the counter is the way to go and don't forget, very fresh eggs are much harder to peel than eggs that are a few days old.
