Default Steamed muffins anyone?!

I got this recipe off someone's blog and these steamed banana muffins are to die for, they're just so soft. And u ladies probably already have the ingredients in yr kitchen so no harm trying.

Ingredients:

2 eggs

100g sugar (about 1/2 cup)

2 ripe bananas, mashed

150g self raising flour (1 cup)

1/8 tsp baking soda

75g oil (1/4 cup or 5.5 tablespoons)

-Sift together flour and baking soda.

-In another bowl, whisk together eggs & sugar until ribbon stage. Mix in the mashed bananas and beat until combined.

-Gently
fold in flour mixture(figure 8's) and oil so that u don't deflate the eggs+sugar mixture.

-Pour batter into muffin pans lined with muffin cups
----->I skipped the pan and just used those aluminium foil like paper cups with the muffin paper in it, it worked.

-Steam over high heat for 15 minutes.

Voila.

oooh these sounds delicious! the steaming must add so much moist goodness .

so it works with just muffin cups and no muffin pan? do you think it would work with just a muffin pan and no cups?

now to see if i have something i can use as a steamer

Hmm..Im not too sure. I know that u can use a cake pan(have to cook it longer of course), so it should work with just the muffin pans alone. U might have to grease it though...I say might because Im not sure...

And most pots and pans set these days, come with a stackable steamer thingy. maybe u have one of those lurking in the kitchen somewhere.

Alternatives to steamer:

- Put a small bowl in the centre of the wok. Put yr muffin tray/pan on top of the bowl. Fill the wok with water. Cover with lid.

or

-Rice Cooker

hmm..i didn't use a muffin tin either. i just put the muffin cups on top of the steamer.

I have a large Roaster - which presently only gets used once a year at Thanksgiving to serve some side dishes - I am thinking that this would be great to try in that... Just putting some water in the bottom of the insert and then set the muffin tin in it and covering... I would think this should work since the Roaster is essentially like another oven

that shld work fine, as long as the stove is big enough for the roaster.

self raising flour? it shld be right next to where the regular flour is in the baking aisle.

Tip on making your own self rising flour (you prob have all the ingredients in your kitchen)

How To Make Self-Rising Flour

Here's How:

1. Using a dry measure, measure the desired amount of flour into a separate container.
2. For each cup of all-purpose flour, add 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt.
3. Mix to combine.
