Super Easy Buffalo Chicken Dip

1 cup Texas Pete Pepper sauce
1 cup ranch dressing (i use bottled Kraft)
1 8oz block cream cheese
1 cup shredded cheddar
1 can already cooked chicken breast (or use about 1 cup cooked chicken, shredded)

mix all ingredients, pour into pie tin or small oven safe casserole dish, top with extra shredded cheddar.
bake 30 mins at 400 degrees. serve hot with tortilla chips.
Tastes like Hot Wings!

I eyeball everything so these measurements are an estimate-if you want more or less just adjust...

36 oz White Chocolate Bars-not chips-I use the baking bars...
Stick Pretzels (About 2 c.)
Crispix (About 5 c.)
Cracklin Oat Bran (About 2 c.)
Reece's Pieces (About 3/4 c.)
Mini Marshmallows (Christmas time I used the red and green trees) 1c.
1 canister Oreo bits (Found in the pie filling section) or you can crush up your own (About 1 1/2 c.)
Salted (Cocktail) Peanuts (omit if allergic~My nephew is and when he will be eating I just add more pretzels for the salty)

Melt the White Chocolate
Mix all other stuff in big roasting pan
Pour melted White Chocolate over the top
Spread out on parchment paper lined cookie sheets (2)
Stick in the fridge or where I am it is cold and I just put in the garage for about 30 minutes.
Break it up and put in a container ~ holiday tin ~ or Ziploc

HIGHLY ADDICTIVE!!

I don't measure- just guestimate. These are things I usually have in my pantry. Here goes-

Beef and Black Bean Enchiladas

Heat oven to 375

1 can black beans, drained
1 lb ground beef (if you half this, you'll get about 6 enchiladas, ball park- can also sub ground turkey or chicken)
Chili powder to taste
Garlic to taste
Cumin to taste
Chopped or even dried onion (you can add a jalapeño chopped and throw in too, if you like or if you have on hand)
Few tablespoons of salsa
Flour or corn tortillas, whatever you have/prefer
1-2 cans enchilada sauce, however saucy you like it
Shredded cheddar cheese

Brown beef, w/ onions and garlic, season w/ chili powder, cumin, salt and pepper. Add about maybe a cup of water or so, like making tacos and add in your salsa if using now. Add drained beans- simmer until a taco meat consistency and not watery.

Get baking pan and tortillas ready. Fill tortillas and roll shut, w/ seam to bottom of pan. Once done rolling, pour enchilada sauce over and topped w/ cheese. Bake about 10-15 minutes until sauce bubbles and cheese is melted.

easy pasta

plum tomatoes
garlic
fresh basil
farfalle pasta

blanch tomatoes and then peel. dice.

while pasta is cooking have evoo in pan with minced garlic, heat but do not let garlic burn, use a little kosher salt once hot add diced tomatoes saute once pasta is cooked add to pan along with fresh torn basil.

you can add shrimp if you like.

this is good and simple. for additional kick add a little bit of capers.

Oh my gosh, these sound amazing. I feel badly because I have nothing to contribute...

Quick party snack:
- Place one Pringle potato chip on cat's head, like little hat
- Eat chip off of cat's head
- Watch cat scowl at you and repeat until cat leaves room

That's all I got. I can't promise this is sanitary.

i made this last week over chicken for dinner. 15 mins start to finish

Sun Dried Tomato Pesto:
1/2c sun dried tomatoes packed in olive oil
drizzle of olive oil from tomatoes
about 15 fresh basil leaves
2 cloves garlic
salt & pepper

then just mix in food processor :)

spoon over chicken, toasted italian bread, veggies, you name it!

another glaze i made last night....over chicken again...

Balsamic Glaze
1/2c good balsamic vinegar
2T honey
Ribbons of basil, or dried is fine
Fresh cracked pepper

Bring to a boil, then reduce to medium heat for about 5 mins until thick. delish over chicken

Garlic Mushrooms

225G Mushrooms
15G Butter
2 Crushed Cloves Garlic
Dash of Hot Sauce (optional)
Salt & Pepper (optional)

Wash and dry mushrooms. Melt butter in hot pan and add mushrooms, cook on medium heat for couple of minutes,
stir constantly. Add garlic and continue cooking for another 2 minutes. Add salt and pepper now if wanted.
Reduce heat to a minimu then cover with a tight fitted lid. Leave the mushrooms to sweat for 10 minutes, stirring occasionally.

^^ Garlic Butter to go with,

225g unsalted butter, softened
6 garlic cloves, finely chopped
2 tbsp finely chopped spring onion
juice of 1 lemon

Mix all the ingredients with a fork.

Form into a sausage shape, wrap in cling film and chill. The butter can also be stored in the freezer and sliced when needed.

Mine:

Easy baked spaghetti.

1 package cooked spaghetti
1 can prepared spaghetti sauce
1 package Italian meatballs, thawed
1 package shredded mozzarella cheese

Mix first 3 ingredients together in a baking pan, then top with cheese. Bake at 350 for 45 min or until cheese is fully melted. Great in times of desperation, but it's also super easy to modify.

The more complicated but still easy recipe:

Saute thinly sliced garlic, mushroom, and onion in 1 tbsp butter
Add sauce and meatballs
Stir in dried basil and oregano to taste
Stir in red pepper to taste
Pour in pasta and some of the cheese
Then place in pan and top with cheese, and bake as directed.

"Garbage Bar Cookies"- made these this weekend for cookie plates for work and boy scouts

Heat oven to 350

About 1.5 cups crushed graham crackers or other cookies
2 tbs melted butter
1 can sweetened condensed milk
Chocolate Chips
Coconut flakes
Butterscotch Chips
Pecans, walnuts or peanuts
Whatever sweet odds and ends are in your cupboard- see below

You'll need a 9 x13 pan. Mix your crumbs w/ the butter and press into pan bottom, evenly cover. If you need more crumbs, just melt more butter and mix up.

Pour 1/2 canned milk over crumbs. Then throw whatever you are using in- we clean out odds and ends this way. You put whatever in for the most part, flavored chips,nuts, dried fruit, marshmallows, coconut, etc.

Pour remaining canned milk over the toppings. Bake until the milk is bubbling up the sides, a light caramel color and chocolate seems to have melted some, usually b/t 15-25 minutes, depending on amounts and oven you are using.

Supereasy salmon lukewarm carpaccio:


Boil some potatoes, then peel them and make some slices (1 cm.)
Preheat the oven at medium heat.
Cover a serving plate with a layer of the sliced boiled potatoes. Cover the potatoes with thin slices of fresh salmon, then dress with salt, pepper, a very good olive oil and the juice of an orange.

Put the salmon in the oven for few minutes (it has not to overcook).
Serve!

this is my version of easy recipe .. probaby so easy that most of u do not need me to post here lol

1. steamed soy sauce chicken
- wash chicken (can be drums, wings or other parts) and dry it
- put chicken in bowl/ plate and rub salt on chicken (i use about 1 teaspoon salt for 5 wings). leave for 5-15min.
- add in 6 tablespoon soy sauce and 3 tablespoon water to chicken in the bowl/ plate
- steam the chicken for 15-20min. u should see clear oil alike thing floating on top, that's my sign that it's cooked.

2. Butter Potato
- skin and cut potato into pieces
- boil the potato till semi cooked (about 5min on high heat)
- stir fry the potato with butter till potato is cook fully. i use about 1 tablespoon butter for 2 medium size potato.
- add in salt. i use half teaspoon salt for 2 medium size potato.
- add black pepper if desire. i use a quarter-half teaspoon pepper for 2 medium size potato.
- the potato should be able to poke through easily with fork, that's my sign that it's cooked.
