Easy chicken dinner:

4 boneless skinless chicken breasts
1 can condensed cream of chicken soup (I use the healthy choice or low sodium)
10oz sour cream (will work with full fat, low fat or fat free)
Almonds (optional for added crunch)

Mix soup, sour cream and almonds. Slather 1/4 of mix on the bottom of a 9x13 pan. Season chicken with salt and pepper and place the chicken in the pan on top of the mixture. Pour remaining mixture on top of the chicken and spread the remaining mixture evenly over chicken. Cover with foil, bake at 400 for 45-1hour (depending upon your oven). Serve with rice or noodles.

I love this recipe. I also prepare it in a crockpot (on low for 4-5 hours). Sometimes I add basil and/or onion powder. I usually serve mine over pasta. Yum!

Red beans and rice:

Saute a package of sausage, removed from the casings (I use chicken sausage to be healthier). Add a sliced onion and saute until softened. Add water (according to package directions). Add Vigo brand red beans and rice and cook according to package directions. Normally I tinker with seasonings, but the Vigo is just perfect the way it is. This recipe makes four servings at 330 calories and 7.5 grams of fat.

I don't know if this really classifies as a recipe...

But when I'm craving rice crispy treats I make a fat free version. I just melt the marshmellows in the microwave and stir in rice crispies. I don't add any butter. I just eat the mixture from the bowl and it takes care of that craving.

When you feel naughty, add chocolate too . It's great for when my school wanted us to bring food for functions, i'd melt chocolate, marshmallows and rice crispies and mix it together. Then i'd roll then into balls, and put them in the fridge overnight. It is absolutely heavenly.

That sounds good!!! My mom used to use leftover Halloween chocolate candy and melt it in the microwave then mix in rice crispies and then put in the fridge to harden and its like a Nestle Crunch, but better!!

Rice and Beans

One Can of Red Kidney Beans , one small can of roasted garlic tomatoe sauce , salt pepper chili powder to taste
1 cup of rice , 1 can of chicken stock plus some water

Cook rice by directions
Drain beans , add beans , sauce , salt and pepper in pan and let simmer while rice cooks , taste and adjust seasoning if you like
makes a great side dish to mexican/hispanic dishes

Super Easy Tuna Macaroni Salad
One box of Macaroni Elbows
1 large can of Chunk Light Tuna Fish
1/2 cup of Mayonaise or as much or little as you want
Salt and pepper

Boil Macaroni Elbows until tender, drained ran under cold water until cool
put in mixing bowl
Add can of tuna
Add mayonaise and salt and pepper
for a little spice you can add a pinch of spicy mustard
Mix it up and put it in the fridge, ohh it's so good.
I kept eating it out of the pan I put it in. I had to make two pans when my family was over, even the kids were tearing it up.

Easy Paella:
One package of yellow rice
sausage (chicken or turkey for a healthier option)
shrimp
one onion
garlic

Saute the sausage (remove from casings) until browned. Add the sliced onion and garlic and saute until soft. Add water and rice according to the package directions. When ten minutes remain of the cooking time, add the shrimp. Enjoy!

Cheese muffins

Preheat oven to 425F

Mix
1c Bisquick
2/3c VERY loosely packed grated cheddar cheese
Garlic powder OR paprika. To taste.

In a separate bowl, whisk together with a fork:
1 egg
1/2c milk.

Add to flour mix. Stir thoroughly.

Mixture should be sticky but not runny. Sticky but not dry. Add a tbsp of milk if dry. Add a tbsp of Bisquick if wet.

Divide into 4 muffins and place on baking sheet. Cook at 425F for 11 minutes.

Serve hot with butter.

Oooh I love this thread!

If you like s'mores, but don't have a campfire...

1 graham cracker piece
marshmallow fluff
chocolate chips

spread fluff on cracker and sprinkle with chips. Toast in a toaster oven until chips are warm
take out of toaster and use knife to spread together.
better than a microwave because the cracker gets toasted and the marshmallow can be toasted.
Delicious!

I've tried the PB cookies recipe before then forgot about it. I'm using it for the potluck we have next week. That recipe is too easy and will feed many!

Here's one for great chicken!!

Balsamic Glazed Chicken
Serves 2

Rub:
1 minced clove garlic
2-3 tablespoons chopped fresh rosemary
2 tablespoons extra virgin olive oil

chicken:
2 chicken breasts or strips (boneless & skinless)
1 medium onion sliced 1 inch thick
1/4 cup balsamic vinegar

Rinse the chicken and pat dry. Combine the garlic, rosemary and 2 tablespoons of oil. Rub the chicken all over with the rosemary mixture. Cover and refrigerate (or not) 3 hours or more. Preheat oven to 350 degrees. Place the onion slices on the bottom of a small roasting pan. Place the chicken on top of the onions. Pour the vinegar over the chicken. Roast in oven for 45 minutes or until cooked thoroughly.

Have rice, pasta, potato, or salad and dig in!
