This was one of the spur of the moment things so I didn't use a recipe, but it's a simple, fool-proof dish. I got 1 pound of large scallops (bay scallops are too small) that are about 1 1/2 inches across and a package of bacon (you just need about half a package). That should be enough for two people.

I cut the bacon in half, wrapped each half around a scallop, and put 3-4 of these on a bamboo skewer to secure the bacon. (I soaked the skewers in water for 30 minutes before hand so they don't burn on the grill.) Put some fresh-ground black pepper on them, but nothing else since the bacon is pretty flavorful already.

I used my charcoal grill; you can cook this on the stove in a grill pan or a frying pan, but an outdoor grill is best. (If cooking in a pan, I'd just use toothpicks instead of skewers.) Either way, make sure the cooking surface is screaming hot. Put the skewers on the grill and don't touch or move them for about 2 minutes because the bacon/scallops will stick until the outside is cooked. When the bacon is browned and mostly crisp on one side, flip the skewers over and cook the other side. The scallops cook quickly, so when the bacon is crisp, they should be done. It's good with a little squeeze of lemon or lime juice.

chinchillamoose, that sounds great!

I'm a big fan of all seafood, even stuff like squid and eel, but I cannot STAND tuna out of a can. I don't know why, I think it's the smell. It seriously makes me ill, I can't even be around when people are eating or making tuna salad. Sometimes the bf eats tuna salad and I refuse to kiss him for hours!

I LOVE seafood! Its one of the rare things that not only TASTE great, but are healthy isnt very fattening!!
