ok i have officially made freetoes's meal and it was divine!!!!!!! i loved it and the SO who was ill actually ate 2 platefuls so i know it was super..

i changed somethign though i cooked it in a pot cuz i didnt have a deep enough frying pan. and when i added the pasta it seemed to be no water ( and i read you have to have apsta underwater ) anyway so i added another cup, it turned out fine but i guess it was 2 much water and diluted the salsa sauce. but it was super. and GREAT under nachos.. im OFFICIALLY calling this dish freetoes. i told SO if you want this again just ask for freetoes

Aww ~ thanks BabyBoo. glad you enjoyed it.

EDITED TO ADD: I use the wagon wheel pasta. Seems to work well with little water as there are holes in the pasta.

(sorry I don't measure, so this might not be accurate...)

Cracker Crusted Chicken:
For the crust:
a mixture of 1/2 saltine cracker crumbs and 1/2 flour (enough to coat all of the chicken)

marinade (per ~1 lbs of boneless, skinless chicken):
1 tbsp Oyster Sauce
1 tbsp Soy Sauce
a dash of seasame oil
1 tsp white pepper
1 tsp salt
2 cloves of minced garlic
1 tbsp of minced ginger

After chicken is done marinading, coat them in the cracker/flour mixture and pan fry in a little bit of oil.

Optional: After the chicken is done marinading, I cut them into little cubes and coat them in the cracker/flour mixture. This makes it easier to cook and gives more breading to the chicken. My mom didn't do this, but I do it because I like the breading.

Sweet and Sour Sauce:
1/2 cup apple cidar vinegar
1/3 cup sugar (or honey)
1 can tomato sauce (
8 oz.)
1/8 tsp salt
2 teaspoon cornstarch mixed with 2 tablespoon cold water - Make a slurry


Combine vinegar, sugar, tomato sauce, salt and dissolved cornstarch. Bring to a boil over moderately high heat, stirring frequently. Boil for 1 minute. Pour into a bowl and serve warm or at room temperature.

I used to love this as a kid. Now, I make it for my family and they love it.
By the way, The marinade is universal. I usually buy a bunch of chicken, marinade overnight, and freeze what I don't use. The chicken can be used for stir frys, chinese chicken salads, or eaten alone.

wow there are some fantastic ideas in this thread.
if you want something italiany you could always make a risotto
Butternut Squash Risotto

1 butternut squash (1 kg)
3 tbsp olive oil
1 litre chicken or vegetable stock
125g butter
1 garlic clove crushed and chopped
1 onion, finely diced
300 g Arborio rice
150 g parmesan cheese freshly grated

Top and tail the squash, cut in half round the middle then pare away the skin from the larger half without losing too much flesh. Cut whole squash into 5 cm deseeded pieces. Place on a large baking sheet, drizzle with 2 tbsp of olive oil and season. Mix well and cook in top of oven at 220'C for 15 mins. The squash should be soft and slightly browned.

that last step can be done auto root vege cook in the microwave easily :)

Meanwhile heat the stock to a simmer in a saucepan.
Melt the remaining olive oil and 50 g of the butter in a heavy based saucepan, add garlic and onion and saute gently for 5 mins.
add rice and stir well to coat grains,add enough stock to cover the rice. Stir as frequently as poss, as the liquid is absorbed add ladlfuls of stock, stirring well.
Remove squash from the oven, add to the risotto with the Parmesan and the remaining butter, season and stir gently.



im going to recommend a crock pot too, once you get one you can do everything that an oven can do just easier, they really are wonderful, your kids will love you for it

yup. It's also good by itself because the marinade keeps the chicken juicy. But I make the sweet and sour because I'm still a little kid at heart and I like dipping things.
