Talking Quick and Easy

So what is your quick and easy go to dinner? And do you ever just see what is in the pantry and make a casserole out of what you have? I've made some really tasty ones that way. Like a chicken, mixed veggie and shells and cheese casserole.

Just wanting to get some new quick and easy ides...thanks

Here's one: I put a 1/2 cup chicken broth and 1/2 cup white wine in a skillet and add 2 cloves of minced garlic and a bunch of sundried tomatoes and saute for a couple minutes then I add 4-5 chicken breast--sprinkle with some romano cheese, italian seasoning, fresh basil, and some tomato/basil feta cheese--cover chicken and cook on low for about an hour--sooo good!

This one is gorgeous, VERY quick, and can be pretty healthy!

You fry garlic, ginger, herbs and firm, non-marinated tofu (or chicken) in sesame oil in a large frying pan or wok, adding chopped spring onions in the last minute; at the same time boil separately a pack of noodles and broccoli and then add to the frying pan when cooked, with oyster sauce or vegetarian oyster sauce.

Takes 10 minutes to make and is really nice.

I'm going to the store to buy condensed milk and chocolate chips NOW! To make this fudge:

Update- I made the fudge and put it in the fridge. But still this AM it's not set and hard!

What did I do wrong?

I stuck it in the freezer now! LOL

No it said Sweetened Condnsed milk.

It was like a pudding texture... Very gluey looking and off white?

hmm, I made a batch yesterday to test it, and it came out fine....1 bag of chocolate chips, 1 can cond. milk, 1 teaspoon of vanilla....

I am making mussels and couscous tonight. It takes about 10 minutes to prepare. It will feed about 2-3 people and cost about $14 for the ingredients.

2lbs of frozen mussels (half shell)
1/2 cup of vodka sauce (from a jar) - can add more if you like sauce! Can add any spaghetti sauce, really.
1 package of instant couscous.

Cook couscous according to package instructions (about 5 minutes).
Put vodka sauce into pot. Heat until warm and then toss in the mussels. Cover and cook for 6-8 minutes.
Put couscous into large soup bowls and pour mussels and sauce over for an instant meal. Enjoy!

Ohhh... I didn't use vanilla...

Would that matter that much in the way it set?

Here is my vegi casserole to eat with pasta or couscous
- Can of tomatoes
- Zucchini/Carottes/Eggplant - I might add peppers or green beans
- Thymian/Chili powder/Cinnamon/Garlic clove sliced thin (plus sugar to remove bitterness from tomatoes)
Add everything in one casserole and let simmer with lid on
If I dont want to bother to cook pasta or couscous - I add a few potatoes.
The good thing with this casserole is that I do not need to stay and watch.
