This recipe makes such a nice cake, really moise and stays moist even if its left out! I guess it could kind of work for christmas, but its probably better for thanksgiving. and if you put a like double the cinnamon in its still good (cap fell off while i was measuring lol)
2 cupsflour2 tsp.baking powder2 tsp.cinnamon1 tsp.baking soda1 tsp.salt4eggs, beaten1- 16 oz. canpumpkin1 1/3 cupsugar1 cupcooking oil
- Pre-heat oven to 350 degrees.
- Combine beaten eggs, pumpkin, sugar and oil, beating until well mixed.
- Add dry ingredients, and mix together until smooth.
- Spread batter into an ungreased baking pan (15" X 10" X 1")
- Bake in oven for 25-35 minutes.
- Cool and frost with cream cheese frosting.
Cream Cheese Frosting:
1. Beat together the ingredients below until light and fluffy:
- 1- 3 oz.. package of cream cheese
- 1/4 cup margarine
- 1 teaspoon vanilla.
2. Add 2 cups powdered sugar, beating until smooth.
3. Spread cream cheese frosting over cooled cake. 4. Sprinkle with chopped nuts.
