1. Quick French Dip sandwiches: I buy roast beef (thin sliced) and provolone cheese from my deli and warm the beef up in a sautee pan for just a few minutes. Then just stick the meat on the bread and put some of the cheese on top and stick the sandwiches in the broiler so the cheese can melt. And then I also sometimes buy the microwave mashed potatoes (like diner's choice) and then get a pack of instant au jus sauce and make that for dipping the sandwiches!

Other suggestions: Omeletes, Salads (I will sometimes grill up a lot of chicken early in the week and save it to throw on salads for the rest of the week).
