Default Lunch Ideas

I'm getting really sick of the same thing for lunch everyday. Anyone have any ideas? I have access to a fridge, freezer, hot water, toaster and a microwave.

Right now I'm either taking leftovers from the night before or I make a pasta salad. Getting sick of pasta pretty quickly! lol.

I love anything really... not so much red meet but most other foods.

Thanks for the hummus tip! I'll pick some up tomorrow.

Lately, I've been using my Williams-Sonoma vegetable chopper


to make short work of chopping up 2 hothouse tomatoes, 1 English cucumber, and 1 avocado.

I add 1-2 Tbsp lime juice and toss together. Then I put in a bowl and use plastic wrap to mold around the mound of ingredients so the air doesn't get to the veges. I make enough to last 2 lunches and 2 dinners.

Then I switch around which protein I want to add and make either salads or wraps of whole wheat tortillas with:
Tuna - albacore only, packed with water (less mercury)
Smoked salmon pieces
Hummus
Tyson's precooked diced chicken (more tender than I can cook)

I also switch around what dressing I use. Sometimes I add herbs.
White wine vinegar and Dijon mustard
Balsamic vinegar
Mayo
Paprika with the hummus
Fresh lemon or lime juice

And there is no beating crackers with really GREAT cheese and apple slices!
I like Stoneground crackers, low sodium. (Wheat Thins and competitors have lots of junk ingredients.)
The cheese has to be terrific to be worth the calories. I go to a specialty cheese shop for fantastic
Brie, Camembert, Goat cheese, St Andre, Gruyere, Montpelier, Raclette, etc.

I have the same problem. I take leftovers or frozen meals, like Kashi, Lean Cuisine (whatever is on sale) and I am bored out of my mind.

I eat salads, cereal, soup, sushi (from the local supermarket where it is made fresh everyday), pita pocket sandwiches, tuna with crackers, soft pretzels, yogurt...

Heres a recipe for a rreally yummy salad...Peel and cube a granny smith apple, cube up equal amount of vermont chedder cheese(its a sharp cheese--you can substitute any cheese you like), 1.5 cups cashews, and any kind of lettuce you like--I get the bagged dole mediteranian mix put all ingredients in a bowl and mix in a creamy poppyseed dressing then top with chinese crunchy noodles--I like the thin ones. Its very good!

When I worked, I always liked to toast bread and microwave the lunch meat and cheese to make a sort of 'faux' grilled sandwich.

Scrambled eggs work well in the microwave...easy to add in cheese and lunch meat.

TJ has a great marinated mini mozz balls....through in some grape of cherry tomatoes for an instant caprese salad.

I always do leftovers, too. Since you have access to a toaster oven, open face toasted sandwiches would be wonderful....

This is one of my new favorite recipes, and it re-heats in the microwave beautifully:

Fiddleheads are not usually available, so I make do with asparagus only (I use the entire spears, cut into about 1" pieces).... I've found the key to making this successfully is to cook the rice slooowwwly, adding more liquid as necessary until the rice is fully cooked and very creamy. I also substitute lemon oil for the lemon zest since I have it on hand and the bottle seems to be bottomless.

well when i did work i would eat a big breakfast and shop for my lunch hour but now that i stay home with my kids i eat soup and sandwich or salad and sandwich or soup and salad also buy fancy bread like not just sliced bread and it will make it look better and taste better i love turkey

i hate preparing lunch every day, unless it's leftover dinner, so i empathize. do you guys have anything like fresh direct that can deliver meals? essentially fresh direct takes all these dishes from all these great restaurants with different cuisines, packages them, and sells them for under $10, delivers to your door, you microwave for 4 minutes and voila, you're done! a lot of my co-workers get them delivered to work. they list the nutritional content of every meal as well, so you can choose healthy ones. if there's a food delivery program like that, it's your easiest bet!!

i get tired of what i eat for lunch to...i'm in canada right now and it is so hard to find a decent avacado here!

things i love...
-open-face whole grain baguette, avacado, and tandori chicken
-whole grain crackers of some sort (wasa crackers are good for this too), topped with cream cheese and red onions
-campbell's tomato basil soup is delish/fast along with a small salad or piece of bread (or both)
-chicken salad made with only chicken, brown mustard and pickles (i eat this alone, or open-face sandwich style)
