Default Key Lime Pie....?

It's the only dessert I crave when it's 105 and humid as hell (typical for this part of Georgia right about now). Anyone have a great recipe you care to share?

I don't have a recipe (LOL! I can't cook very well), but I love Key Lime Pie too. I vaguely remember there was a recipe on the bottle of Nellie and Joe's Key Lime Juice that I've bought before.

When my family and I took a vacation to Key West, we'd go out to dinner and I'd make it a point to try the key lime pie for dessert.


By the end of the trip I became a conoisseur: "I like the texture of this one but that one had more lime juice in it."

I recently tried that one...it tasted great but the texture was more of a custard than what I like...not very smooth. Maybe I just didn't blend it well enough.

I also crave this when its hot in the summer--I actually wanted an easy no bake frozen recipe and I found one but for the life of me I cannot find it but it seems to me I mixed lime sherbet, a can of frozen limeade, and a tub of cool whip poured it into a graham cracker pie shell and put in freezer for a couple hours--it was very tart and very refreshing.

From the Cheeca Lodge in the Florida Keys:

Cheeca Key Lime Pie

Beat well:
4 eggs
1 c sugar

Add: ¾ c lime juice

Pour into double boiler and cook.

While cooking add: ½ c butter

When thickened remove from heat.

Add: 1 t gelatin and mix well.

Pour into crust and chill overnight.



Pie Crust

In a large mixing bowl combine:
1 ½ c + graham cracker crumbs
6 T melted butter
1/2 c sugar

Press into 9” pie pan and bake @ 350 for 5 minutes.

This thread is stuck in my head! I must have a slice of cool, tart, Key Lime Pie or else! I haven't thought of anything else for two days now. I may give in and try and make one. LOL! This is fun!

Funny...I live in Key west...land of KL pie...I have had so many different versions its unreal! My FAV is from a place called Alices...she makes it chocolate covered and its TDF! I often send KL pies for Xmas gifts. There is a place that sends them over night. They also make chocolate covered KL pie bars...pretty tasty.

Here's another I had in my recipe folder

Key Lime Pie

With whisk attachment beat on high until shiny (5 min):
3 egg yolks
1 ½ t lime zest

Gradually add and beat until thick (3-4 min):
1 14 oz can sweetened condensed milk

Reduce speed to low and add:
2/3 c lime juice

Bake @ 350 until just set, about 10 minutes.

To serve, place pie in freezer for 15-20 minutes before serving.
