Love them! Raw, fried, however! Roasted is my favorite~ being a coastal SC country girl, it's a requirement! I can eat a whole roast by myself, with a little melted butter and hot sauce on the side....MMM!!!

I love them cooked on the grill until they just start to open. I add fresh lime and Cotija (white, crumbled, Mexican cheese).

This sounds heavenly! How do you roast an oyster, and what's the 'hot sauce'?

They way we do it down here is to clean them really good while they're still in the shell. Some people take them to the car wash & pressure wash the mud off there. Wrap them in damp burlap to keep them cool. We get our oysters as clusters, not selects, usually from McClellanville, near Charleston. They are the best. When ready to cook, place them on a rack situated over a fire, then recover with the wet burlap. This "steams" them. They are ready when they start to open. Thanks! The car wash comment made me laugh for some reason... I just can't imagine bringing down a bag of oysters to the local car wash for pressure hosing!

I love the clusters also better than singles. Yum! I like mine well. not slurpy.

Wohoooo! I just had 2 oysters today. I put them on a cracker each after dipping them in loads of lemon and then I added 5 drops of tabasco..yum!
But I do not like the consistency and the real taste of oysters so I guess that means I don't really like oysters. >_>

It sort of remind me when you swim in the ocean and you take a big nasty mouth in of the water and swallow it by mistake. It also tastes the way seaweed smells >_> Atleast IMO.

I've never tried then fried or steamed, only raw with lemon and tabasco. I love the way they slide down your throat.

If you're ever down south, order an "oyster po'boy"... Paula Deen has a great recipe for them, but they're awesome. If you're squeamish about trying them, it's a great way to "get into them"... they're kinda like fried clams, but even better IMHO... I also like them raw with a bit of horseradish or cocktail sauce. YUM-O. (The moment called for a RRism. Sorry!)
