Default Honey Walnut Prawn Recipe?

Before I start searching high and low for this recipe I wanted to start here.I ate some of this dish at P.F. Changs in Baton Rouge,LA and again at a resturant at one of the malls in Seattle (can't think what its called but it was buffet style with a variety of sushi) recently and during pregnancy when your tastebuds are unpredicatable. They keep running out of it it was just that good.

Well I was wondering if anyone has the recipe for it.It was sooooo good.I also can't think what I ate with it maybe some white rice? Its either that or I make DH drive to Seattle just to get it,lol.Thats ok compared to middle of the night cravings I think.

I've never had it at pf changs so I don't know what their version is like. However, I had it at a buffet and loved it also so I looked up some recipes, basically here is what I found.

Deep fry some shrimp, I think it is coated in cornstarch or flour or a very light batter. Maybe a tempura batter. I don't remember how the walnuts are done, but they are deep fried also.

Then comes the sauce. Combine some mayo, a little lemon juice, and a little sweetened condensed milk. Taste and adjust until it tastes right. Sorry I don't have the exact measurements. Toss the shrimp with the sauce and eat!

I personally tried this recipe! Try to not overcook the shrimp.

Title: HONEY-WALNUT PRAWNS
Categories: Chinese, Seafood, Ceideburg 2
Yield: 4 servings

1/2 c Walnuts
5 c Water
1 c Sugar
2 c Oil
16 md Prawns, peeled and cleaned
1/2 c Cornstarch
1/2 c Egg whites
2 tb Honey
3 tb Mayonnaise
1 tb Fresh lemon juice
1/2 tb Condensed milk
1/2 c Oil

Here's a goody. I normally shy away from Western
influenced Chinese recipes and would never have fixed
this one on my own. It calls for such non-Chinese
things as milk and mayonnaise. My room mate fixed it
the other night though, and it was excellent. He was
trying to duplicate a dish that he and his date had at
a Chinese place a while back and apparently, this is
almost it. Laurie suggested it would be closer to the
restaurant dish by just dusting the shrimp with
cornstarch rather than making a batter. I imagine that
it would be good either way. It certainly is good
this way!

Rinse walnuts, then boil in 5 cups water, continually
changing water until clear. When clear, boil with
sugar until sugar dissolves. Heat 2 cups oil until
almost smoking, then deep-fry walnuts until they're
shiny and brown, no longer golden. Remove walnuts to
cookie sheet, let cool. Mix cornstarch and egg whites
together to form a thick, sticky texture and mix well
with prawns. Set aside. Mix honey, mayonnaise, lemon
juice and condensed milk in a medium bowl until smooth.

Heat oil until boiling, then deep fry prawns until
golden brown.

Drain, then fold in honey-mayonnaise mixture. mix
well, sprinkle with walnuts, and arrange on platter.

Serves 4 to 6.

Daily Review, (Hayward, CA) 2/5/92.

here's the one my mama used.
Kung Pao King Chinese Cuisine Honeyed Walnut Prawns

This is a very quick-to-make dish if the walnuts have been prepared ahead of time.

12 freshwater prawns, shelled (see note)
1 tablespoon vodka
1/4 teaspoon salt

Batter
1 beaten egg
3 tablespoons cornstarch
Vegetable oil as needed for frying

Sauce
2 tablespoons mayonnaise
1 tablespoon sweetened condensed milk
1 tablespoon milk

Glazed Walnuts
3/4 cup granulated sugar
3/4 cup water
1 (6 to 8 ounce) bag shelled walnut halves

To deep-fry prawns: Rinse prawns with cold water. Pat dry and toss with vodka and salt in a bowl. Marinate 30 minutes. Drain and set aside.

Toss prawns first in egg, then in cornstarch. Allow to dry 5 minutes on a wire rack.

Heat about 2 inches of vegetable oil in a high-sided pan to about 325 degrees. Add prawns and cook until golden, about 2 minutes. Set aside cooked prawns on paper towels to dry.

To make sauce: Combine mayonnaise, sweetened condensed milk and milk. Set aside.

To glaze the walnuts: Place sugar and water into a pot over medium-high heat. Stir until sugar no longer feels grainy and mixture forms a syrup. Add walnuts; reduce heat to low and stir. Cook, stirring often, about 15 minutes. Cool nuts on wax paper.

To assemble dish: Toss prawns with sauce. Place on a platter and sprinkle with glazed walnuts to taste. If you have leftover walnuts, they may be frozen, or eaten as a sweet snack.

Serves 4 as an appetizer. Or serve with rice to make an entrée for 2.
