I enjoy steak medium rare... occasionally I will use steak sauce or Worcestershire sauce. I also love some grilled onions or mushrooms to accompany it.
In regards to a hamburger, however, definitely as close to well as possible-- too much exposed surface area and potential for bacteria, etc. I just compensate for moistness with ketchup, mustard, pickles, and any condiment I can get my hands on.

I'd say the texture is pretty close to that of beef tenderloin, maybe just with a little less grain, and almost no fat. The secret to good venison is to not overcook it, and to marinate well. The gamey taste comes from meat that is improperly processed, and also from not trimming every bit of silverskin from the meat. Because venison is so lean, it is important when preparing it to include some kind of fat to prevent it from drying out. Wrapping in bacon when either grilling or roasting works well and adds a nice flavor.
That reminds me, I still have a tenderloin in the freezer from this past hunting season. Maybe I'll do a little grilling this weekend!

I don't eat lots of steak (for some reason it's hard for me to chew/digest properly), but when I do, I like it well done. The BF does too, we eat all our beef (burgers, steak, etc.) well done. LOL I think we're a dying breed.

Filet mignon has been one of my favorites since I was about 4 years old! I like it butterflied and somewhere between medium and medium-well. Ruth's Chris makes my favorite steak, they cook it in butter and there is no char anywhere (I hate char, that's why I usually get it butterflied) and it's sooo tender, yum!

Wow, me too! Everyone says a great piece should "melt in your mouth", but it doesn't! I haven't had it in years because of that. I'm going out for a function this weekend, and I know tenderloin will be served. I will give it another shot, because I think that I am truly missing out.

I love the gourmet sauces that are always served with steaks though. Not A1, but like Mushroom demi glace or red wine sauce. I could eat the sauce with some great bread!

I LOVE NY Steak, And I love it Grilled Medium Rare with A1 BBQ Sauce drizzled on it. Oh, and some Grilled Mushrooms and Onions on it too. I'm so going to try it with black pepper next time, and maybe a little bit of that Asian red chili sauce. Delicious.

We're having steak tonite...LOL! I have two lovely bone-in NY Strips marinating in the fridge. Mmmmm.....
Now, do I make homemade french fries from the bushel of red potatoes I got, or my french onion rice. Hubby says either one will make him happy!
