This is a fool-proof recipe. I make this all the time - especially in the summer. I use tilapia, but have also used yellowtail. I either make the fish version or use shrimp only. If you're afraid of the "raw fish" use cooked shrimp and cut it into very small pieces - just as yummy!


Oh, and I pour margaritas or coronas with this!

CEVICHE

2 lbs raw Tilapia-chopped in cubes (preferably fresh; not previously frozen)
1 red onion-diced
1 ½ medium tomatoes-diced
½ bundle cilantro-chopped
1 large jalapeño-diced (use more if you prefer spicy)
6-8 large limes-squeezed
½ carrot-grated
Garlic salt (to taste)
Pepper (to taste)

Tostadas or tortilla chips
Tapatio Sauce

Optional ingredients
1 green bell pepper-diced
1 cucumber- diced
Avocado-sliced or diced
Raw bay scallops, raw shrimp, or raw octopus in combination with the tilapia or to substitute it.
can also use Imitation Crab.
If you want some fresh fruit - use mango cut into small chunks


Add lime juice and fish - toss gently. Add remaining ingredients. Allow tilapia to marinate at least 1 ½ hours (the acidity of the lime juice cooks/cures the fish) . Sprinkle on Tapatio Sauce and Enjoy!

*Adding the shrimp, scallops, oysters, etc, plus avocado, cucumbers, and clamato makes more of a "shrimp / seafood cocktail"

I absolutely LOVE ceviche but don't usually make it. My sister has an awesome recipe for it, very similar to the one Yvalenz posted! In fact, I've been inspired and I may try it this week...yum! And to the question about ceviche tasting fishy or slimy, in my experience good quality seafood, plenty of citrus (limes or lemons), and some spice prevents this 100%.

Love, love, LOVE ceviche! Never made it, and don't want to! I'll leave it up to the expert chefs here in my city that use the freshest fish!
