Best way to cook chicken for pasta dishes?

Ooh la la!
I plan to cook for about 6 people and want to make a chicken broccoli ziti dish or some kind of pasta with pieces of chicken in it. What is a healthy and easy way to cook the chicken that won't be a huge hassle while I try to prepare other things? I want to maintain the health benefits of the chicken, but still want it to be delicious and flavorful. I'm also bad with over and undercooking it, so please give detailed explanations such as temperatures, liquid amounts, and times. Thank you!

You can poach chicken breasts ahead of time.

Put them in a pot and cover with water, or use chicken broth, which will make it more flavorful. If you're just using water, make sure to salt it. You can add some fresh or dried herbs, peppercorns, a bay leaf if you have one.

Bring the water to a boil. Lower it to simmer for about 10 minutes, then turn the stove off, but leave the chicken in the broth for about 15 - 20 minutes, it will continue to cook. You can refrigerate until you're ready to use them, then shred or cut it for your pasta dish.
