Default Swimming and ?

I was walking pretty regularly, and before that, I was going to the gym like a nut. Well, my body didn't love that. Knee bone is connected to the hip bone is connected to the back. . .stuff. I'm all out of whack, and I have to start physical therapy again. I am going to try to get into a gym with a pool (UNH has one), but in the in between time, what exercise can I do to burn calories, tone and strengthen my core? (I have to ice my back after walking, so that's out right now). Oh. . .also. . .what is a good food to stuff you, so that even if you want to inhale your dining room table you are much less likely to do so?
