Deborah Madison - Vegetarian Cooking for Everyone. I would recommend that one and some of the Moosehead Restraurant books.

Super Natural Cooking by Heidi Swanson.

She has a recipe blog too 101cookbooks.com and you can get a feel for her recipes and ingredients to see if they suit you. I'm not a vegetarian, but I really like her recipes!

I love the New Vegetarian Epicure by Anna Thomas and The Roasted Vegetable by Andrea Chesman. The first has the best lentil soup recipe ever, and the latter has simple recipes for easy and yummy preparation of vegetables.

The Vegweb site has been a lifesaver for me. The format is great --I'm filling up a whole folder of recipes and its like having a personalized cookbook.

I was so totally going to suggest Heidi's site! I too, am not a vegitarian, but I am interested in eating healthy so I love her recipes. And just fyi, I made a special dinner last weekend for a vegetarian friend... three courses, all recipes from heidi's blog... and he loved them all! Even my "I love meat" DH loved everything I made and told me I could make that meal again, any time!

Her recipes are fantastic! Check her out!

I love the Veganomicon and Vegan with a Vengance. They are both by Isa Moskowitz. The Veganomicon is supposed to be the Vegan Joy of Cooking.

Yes, def. try out some of the Moosewood books. I work down the street from the restaurant and the food is awesome. I've been cooking from their Low Fat cookbook for years and the recipes are all delicious.

I love Moosewood too and also I've used allrecipes.com AND whole foods web site!! I know I sound like a sales girl for Whole Foods but I practically live there. Whole Foods has a lot of really great recipes on their site.

I 2nd the Veganomicon. It is amazing! I made the pumpkin baked ziti with caramelized onions and sage crumb topping tonight for my meat-loving brother and mother, and they went crazy over it

I'm not vegan, but have a somewhat odd, paranoid fear of butter, cream and most cheeses, so a vegan cookbook really helps. Even if i use a 1/2 cup of non-hydrogenated margarine in a recipe instead of butter, i feel healthier

"Sundays At Moosewood" c. 1990, "Laxmi's Vegeterian Kitchen", c.1995, and "365 Ways to Cook Vegetarian" c. 1994are three that I have

Laxmi's in India's vegetarian tradition, the Moosewood features cool recipes of many different cultures, and the last book is just a little binder of a book., with simple recipes. Author is Kitty Morse

Not sure if all or any of them are still in print

-Oh, I found another on my shelf- "Verdura- Vegetables Italian Style" by Viana La Place, c. 1991
