Hi,

I thought this thread might be helpful to anyone trying to eat healthier.....

The only way I know of how to do veggies is either "stir-fry" them or bake them. (of course, raw too)

Any ideas very welcome.....

We can move it to the kitchen forum; I had just put it here to kind of go along with the compulsive eating thread (healthier home eating efforts).... wherever it's the most helpful is good with me.

I usually like to eat salads to have my veggies. A nice light fat free dressing really helps and some good wholesome grilled chicken!

I love the veggie wrap at the deli down the street from me. They are raw veggies in a wrap of your choice with a little cheese and guacamole if you like. Great alternative to a salad!

I have vegetables everytime I eat dinner. Be it broccoli, salad, greens, squash, or zucchini. I make sure I have a vegetable with my dinner.

That sounds delicious. I love guacamole. I'm borderline obsessed with it.

I get my veggies either through eating a salad or as a side item with my lunch (baby carrots or cucumber slices or something). I'll warm up some frozen vegetables and eat those with dinner, too. It's a quick and easy way to get them in my diet!

Deep fried or sprinkled with cheese would be my favorite answer......

But realistically, I love them steamed, oven roasted, and stir-fried. I like to also make low-cal veggie "bakes" or casseroles~

Because I have young children, I'm hiding veggies in everything! Of course, I also serve a vegetable with almost every meal to get them used to eating their vegetables, but then I add carrots to smoothies, make muffins with grated veggies, add blended or very finely chopped veggies to chili (they cook in and no one can tell they are in there), etc. I figure they more they eat, whether it is straight or hidden, the better.

For myself, I eat the same things the kids eat, but I also really like salads, V-8 low sodium, and just steamed or stir fried fresh veggies. I try to get at least 5 servings a day, though I don't always succeed.

I stir fry them also! I make fried rice and throw in tons of veggies. I also make soups and put a lot of veggies too. Or curry with carrots, potatoes, celery, mushrooms, onions, etc. Veggies are good-- just slowly incorporate them and add a lot of good healhty flavors!

stir fry seems to be the best way for me, and i've been experimenting with it over the past couple of days. veggies retain their nutrient value best if they stay crisp, and i'm southern (which means i come from a culture that cooks their veggies until they're hardly recognizable), so it's been a struggle for me to include them in healthful ways.

I serve veg with lunch and dinner and it's always some sort of veg curry. When I'm in a hurry I sometimes steam the veg like broccoli, cauliflower etc. but my older son doesn't like it. It's too plain for him but younger son doesn't seem too fussed. When I make curry I do mild veg for the kids and hot and spicy for the adults. I find the hot and spicy veg more satisfying and I eat tons of veg to fill me up because it's low cal.

We eat veggies with everything. Steamed veggies, salads, soups. creams, ect.
