I do not like vegetables but only a few, broccoli, cauliflower even with these I have to spice them up to enjoy them. I like salads with chicken breast. Sometimes collards.

I was watching Oprah today, and Jessica Sienfeld was on. She wrote a cookbook called Deceptively Delicious about disguising vegtables, you can puree them and put them in anything: chicken nuggets, cakes etc.

I prefer my vegtables raw, steamed, or stir fryed.

Raw dipped in hummus, steamed sprinkled with fresh herbs, stir fry, soups in the winter, salads in the summer, kabobs roasted on the grill, roasted in a le creuset. My favorite recently is steamed green beans, tossed with fresh lemon juice, a little bit of olive oil, salt, pepper, and fresh thyme.

I buy frozen bags from Whole Foods and microwave them for 3 minutes and eat them with dinner every night.
Also, you can spread them on a baking sheet, brush with olive oil and put some chopped garlic on them. Bake at 400 for 30 min. DELICIOUS!

Aside from the previous suggestions I also like to incorporate them when I cook Italian (all non-fat): vegi lasagna (no cream or cheese), add them on pizza (easy to make your own with fresh sliced tomato & zucchini, peppers, mushrooms and add basil leafs or add on a pre-made) and also with pasta (current favorite is sliced zucchini, mushroom, garlic and cherry tomatoes with herbs and some feta cubes).
