Food If you're ever lookign for a healthy alternative to brownies....

You would never think these were good but I swear they're so good. I really recommend adding the mini choclate chips. I added about 3/4 cup. ALso next time, I may try mushed up bananas to sweeten the brownies instead of the splenda.

Black Bean Brownies

1 (15 ounce) can unseasoned black beans, drained and rinsed
4 eggs or 1 cup egg substitute
3/4 cups Splenda sugar substitute
3 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
3 tablespoons oil (or 3 TBS applesauce)
1 tablespoon vanilla
1/2 cup non-fat powdered milk
1/2 teaspoon baking soda
1/4 cup low-fat ricotta cheese
chopped nuts (optional)
mini chocolate chips (optional)

  1. Mix all ingredients in a food processor or blender until smooth-you will have to scrap down the sides a few times to make sure it is evenly blended.
  2. Pour into an 8x8-inch pan sprayed with non stick cooking spray.
  3. Bake at 350°F for 30-40 minutes or until a toothpick inserted into the center comes out clean.
  4. Sprinkle additional cocoa powder on top if desired.
  5. Cover with saran wrap to keep fresh or freeze in individual pieces and defrost in the microwave whenever those munchies set in!
 
This does have cocoa powder and mini chocolate chips in it.

I know there is a soy chocolate chip available around here, that sounds like a nice addition, used to use them for baking all the time and they're good.
As for the blackbeans, sounds like a great idea, I've done all sorts of things with soy/chickpea as alternative ingredients.
